Yes, you can change the terrain. The hammer’s terrain brushes include cube, rock, ramp, disc, and box, and undo works. A “demo” search is usually the demolish tool.

Brushes and undo

Terrain shapes on the hammer: cube, rock, ramp, disc, and box. Overgrowth and decay are separate tools with three brushes each. Undo is the safety net. After 1.0 it works even when the inventory is full. Demolish is the remove action. It is not a separate game mode and not a trial version of Enshrouded.
